Rosemary essential oil is obtained from the leaves, fresh twigs and flowering tops of Rosmarinus officinalis, a perennial shrub belonging to the Labiatae family. Its name derives from the Latin words rosa maris which mean sea rose, perhaps due to the fact that it grows spontaneously on the coasts. Its curative and culinary properties have always been known, in many writings, including some by Dioscorides, it is found as a remedy for the liver, brain and heart. In the Middle Ages, an edict of Charlemagne of 812 obliged peasants to cultivate a rosemary plant in the vegetable gardens, whose scent was believed to contain the soul of the earth.
Rosemary essential oil is obtained by steam distillation of the leaves, fresh twigs and flowering tops of the homonymous plant.
